A Taste of Greece: My New Greek Salad Inspired by Summer Travels

This summer, I had the joy of spending time in Greece, and the flavors I experienced there have stayed with me ever since. One of the highlights of the trip was the simplicity and freshness of the food—especially the salads. Inspired by those vibrant, sun-soaked days, I’ve created a new Greek salad that brings a bit of that Mediterranean magic back home.

Ingredients:

– 1 red onion

– 1 cucumber

– ½ lemon

– ⅓ cup of blueberries

– ½ cup of olives

– Cherry tomatoes

– Fresh mint leaves

– Feta cheese (optional)

 

For the Dressing:

– Olive oil

– Juice from ½ lemon

– Balsamic vinegar

Instructions:

  1. Begin by prepping your ingredients: wash and chop the red onion, cucumber, and cherry tomatoes to your preferred size.
  2. In a large bowl, combine the chopped vegetables with the blueberries and olives.
  3. Squeeze half a lemon over the mixture for a burst of freshness.
  4. Tear or chop a handful of fresh mint leaves and toss them into the salad.
  5. If you enjoy feta, crumble it on top for that authentic Greek touch.

Dressing:

  1. In a small bowl, mix together olive oil, the juice from the remaining half of the lemon, and a splash of balsamic vinegar.
  2. Drizzle the dressing over the salad and toss everything together to coat the ingredients evenly.
